The Chef of Fieldstone Grill

Armand Bove


A Michigan native, Chef Armand Bove grew up on the east side of Detroit. Cutting his teeth at Detroit’s Eastern Market, Bove worked for Bellmont Packing Company throughout high school. It was there that he found his appreciation for the food industry. “In that atmosphere [the market], I came to appreciatewhat the country could provide. From select cuts of meat to local commodities, Eastern Market really opened my eyes.”

 

The next step was studying food marketing at the local Western Michigan University, and led to Bove’s corresponding employment at Millennium Restaurant Group. Millennium now finds Bove putting his original philosophy to work, albeit at Fieldstone Grill. At the newest Millennium Restaurant Group property, the cuisine touts the freshest ingredients and the regional fare of the Pacific Northwest. “I like to stay true to the flavors of a dish,” says Bove. “I want to give people a reason to come back.”
